No Hassle Roasted Curried Zucchini Wedges

Just yum. So simple and fast. If you have a savory tooth in the morning you could throw this in the toaster over=n while you get ready for your day. or use it as a side dish or snack. If you choose this for breakfast, don’t forget to add the protein, too~

To highlight your happiness: Zucchini is soothing and healing to the stomach, and has a good balance of soluble and insoluble fiber for efficient digestion. It’s also high in potassium, B vitamins, and vitamin A.


Curry Powder

Salt and pepper

Cut zucchini in thirds lengthwise, then cut each third in half or in thirds lengthwise.

Lay them in a baking dish and drizzle them with high-heat cooking oil, and Bragg’s Liquid Aminos or Tamari

Sprinkle generously with your favorite curry powder. A flavorful variety will be best. Salt and pepper and garlic also.

Bake for 15-20 minutes at 375, or to your desired softness.

Serve as a side dish beside tofu, tempeh, or peppered salmon and mashed potatoes, or as a main course- with beans and rice for example.
