Cut zucchini in thirds lengthwise, then cut each third in half or in thirds lengthwise.
Lay them in a baking dish and drizzle them with high-heat cooking oil, and Bragg’s Liquid Aminos or Tamari
Sprinkle generously with your favorite curry powder. A flavorful variety will be best. Salt and pepper and garlic also.
Bake for 15-20 minutes at 375, or to your desired softness.
Serve as a side dish beside tofu, tempeh, or peppered salmon and mashed potatoes, or as a main course- with beans and rice for example.
