Instant Lunch: Chickpeas w/ Green Chile & Smashed Avocado

Sooo. This one’s so fast. And SO good.  I feel like I’m at a fancy gluten-free vegan restaurant in the southwest, lunching in the patio in late spring time. Take in that warm, flowery desert breeze…

And it is easy to forget  that this is great for your body and mind!

  • 1 Avocado
  • 1 cup Chickpeas, cooked & refrigerated
  • 1/8-1/4 cup Roasted Green Chilies of your choice.
  • Salt & Pepper
  • Lettuce, Tomato, or Olives optional

The geeky stuff (aka the stuff that heals and fuels you):

B vitamins, vitamin C, potassium, and copper seem to be the main players here.

Avocados have those amazing omegas that are great for your hair, skin, digestive lining, and your brain power! They are also very good sources of fiber, vitamin E, C, B6, copper, and potassium.

Chickpeas are a highly digestible and gut-friendly bean protein option. They’re a good source of fiber, B vitamins and copper, as well as many other fabulous nutrients.

And what about those green chilies? Good source of B vitamins also! Vitamin C and K, copper, fiber, potassium, and more. Plus they will warm your digestion  right up, by bringing blood flow to your tummy!

 

The Method:

Salt and pepper the (drained) chickpeas in a bowl.

Cut the avocado into cubes and add it to the Bowl

Smash a bit with a fork, and stir to desired consistency.

Add green chillies. Stir, taste, and adjust as needed to your liking.

Eat it! Feel nourished and available for life.
